Cripsy prawns with zingy chilli

This simple dish is surprisingly versatile.  Use strips of chicken breast or large pieces of white fish, plaice works really well.  Add a lovely salad and crusty bread for Saturday lunch or just as a starter.

You don’t need to use a lot of oil just 3-4 tbsp and shallow fry to get the lovely crispy effect. Serves 2, enjoy!

Ingredients

50g breadcrumbs

- 3 tbsp sesame seeds

- Zest of 1 lime

- 200g raw king prawns, deveined

- 2 tbsp plain flour

- 1 egg beaten

- Vegetable oil for shallow frying

For dipping sauce

- 4 tbsp sweet chilli sauce

- Zest and juice 1 lime

- 1 spring onion, finely sliced

Method

1 - Mix the breadcrumbs, sesame seeds and lime zest together and season with salt.  

2 - Dip the prawns in the flour then the egg and then into the crumbs and coat thoroughly.

3 - Heat the oil in a frying pan and when hot cook the prawns in batches for 2-3 minutes until golden and crispy.

4 - Mix the ingredients for the dipping sauce together and serve with the prawns.
